While I don't really have an interest in cutting down on the amount of butter I consume (it's delicious!) I do love avocados, which happen to also work nicely as a butter substitute. My friend and I were using avocados for a different recipe and had left overs and decided what better to make than cookies! Although these cookies turned out an iffy color, they tasted incredible just like normal oatmeal chocolate chip cookies. Using brown sugar instead of white sugar probably accounted both for the yumminess and color.
